Angel Acres Super Yummy Zucchini Casserole

This recipe comes from my mother-in-law Carol Deibel and she is a fabulous cook! We think everyone should be able to follow her simple, yet super yummy zucchini casserole recipe and make it perfect every time!
Ingredients You'll Need
For Zucchini -
2-3 WHOLE ZUCCHINI
½ CUP RED ONION, CHOPPED
2 LARGE TOMATOES, CHOPPED
2 T BACON GREASE
2 T OLIVE OIL
For Sauce -
2 T BUTTER
2 T FLOUR
1 ½ C HOT MILK
PINCH NUTMEG
2 EGGS SLIGHTLY BEATEN
¼ CUP PARMESAN CHEESE
Directions
Heat Oven to 350 degrees
Part 1 -
SLICE ZUCCHINI, DICE ONIONS.
COOK IN OLIVE OIL/BACON GREASE MIXTURE UNTIL SOFT ABOUT 8 – 10 MINUTES.
ADD CHOPPED TOMATOES FOR LAST 2 MINUTES.
PUT IN GREASED CASSEROLE DISH
Part 2 -
HEAT BUTTER IN MICROWAVE FOR 30 SECONDS.
ADD FLOUR AND BLEND.
STIR IN HEATED MILK.
COOK IN MICROWAVE 2 – 3 MINUTES.
STIR EVERY MINUTE UNTIL THICKENED.
ADD NUTMEG.
STIR IN BEATEN EGG.
POUR SAUCE OVER ZUCCHINI MIXTURE.
TOP WITH CHEESE.
BAKE UNTIL TOP IS GOLDEN - ABOUT 20 MINUTES.
