Ann's Peach Pie

Why I Love This Recipe
Ingredients You'll Need
4 cups just-ripe peaches, peeled and sliced
1 pie crust, baked
2 T. cornstarch
1 cup Splenda
2 cups orange juice
Lite Cool Whip (I use sugar free)
Directions
1. Bake pie crust according to your recipe, set aside to cool
2. Make Glaze:
Bring orange juice to a boil in a small saucepan (save a couple of ounces out for mixing cornstarch)
Add Splenda to orange juice
Shake cornstarch with a few ounces of orange juice in a covered container until mixed completely
Pour cornstarch liquid into orange juice, reduce heat slightly, and whisk until the juice thickens, stirring constantly
This will thicken into a glaze
3. Pour glaze over peaches and toss gently until all peaches are covered with glaze
4. Chill at least 1 hour
5. Transfer glazed peaches to pie crust and serve immediately (with Cool Whip if desired!)
