Ingredients You'll Need
Filling
1 large apple, peeled and cut into pieces
2 tbsp. plus 1 tsp. sugar
1 tsp. flour
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 tbsp. cold butter, diced
Shortcrust pastry
1/4 glass flour
1/4 tsp. baking powder
A pinch of fine salt
2 tsp. sugar
3 tbsp. heavy cream
2 small scoops of vanilla ice cream to serve
Special equipment: two baking tins (200g, a diameter of 3.5 inches)
Directions
For filling
Preheat oven to 395 °F. Mix apples with 2 tbsp. sugar, flour, cinnamon, and nutmeg. Add oil and stir.
Spread the filling into tins, carefully cover with foil and bake until the apples are soft for about 35 minutes.
Remove the tins from the oven, remove the foil, mash the apples with a fork.
For topping
Combine flour, baking powder, salt, and 1 tsp. sugar in a small bowl. Add heavy cream, then knead the dough with your hands to get a moist crumb.
Place the resulting dough on top of the molds and spread evenly.
Sprinkle every mold with 1/2 tsp. remaining sugar and bake until crisp, 12 to 15 minutes. Let it cool slightly, top with ice cream, and serve.
