Apple Macaroon Cake WSJ October 2023

unsalted butter for pan
1 lb almond paste, broken into chunks
1 c sugar
1/2 tsp kosher salt
6 lg egg yolks
8 lg egg whites
2/3 c flour
3 Granny Smith apples, peeled and sliced in 1/3 in wedges
Directions
Preheat oven 325. Butter 9 in springform pan and line with parchment paper and butter the paper.
Using food processor pluse almond paste, 1/2 c sugar and salt until unformly sandy. Add yolks and process, scraping down bowl halfway through until thick and smooth, 30 sec.
In separate bowl,whisk egge whites and remaining sugar until incorporated. Mixture should be frothy and not yet hold peaks. Gently whisk in flour.
Add egg white mixture to food processor and process for 10 sec. Scrape down sides of bowl and process until you have a smooth batter, about 5 sec.
Pour batter into prepared pan and arranged overlapping concentric circles of apple slices on suface.
Bake until a knife inserted in the center comes clean. 60-70 min.
Run knife around sides of pan to loosen caked and then cool in pan 10 min. Remove sides and slide cake onto wire rack to cool completely. Cake will stay moist in refrigerator for a few days wrapped tightly in foil. Bring to room temp before serving.
