Apple Matzoh Kugel

Recipe from Grandma's best friend Emily, for Passover
Ingredients You'll Need
3 Matzohs
6 Eggs
1/2 Cup Sugar
1/2 teaspoon Salt
1/4 teaspoon cinnamon
1/2 Cup Raisins
4 Tart Apples Shredded
1/2 Cup Melted Butter
Grated Orange Zest
Directions
Preheat oven to 350
Crumble matzohs in water & soak until soft. Squeeze out all excess moisture. Beat eggs, add sugar, salt, cinnamon beating until well blended. Stir in crumbled matzohs, raisins, apples and zest. Pour into well greased 1 1/2 Qt casserole. Sprinkle with a cinnamon sugar mixture (1/4 teaspoon cinnamon & 1 tablesoon sugar) Pour melted butter over all. Bake until firm & brown, aprox 45 minutes.
