I love this recipe because it is very easy to make. It is also very delicious and brings back good memories.
Ingredients You'll Need
1 egg
one half cup milk
2 tablespoons of vegetable oil
one fourth cup of firmly packed brown sugar
2 tablespoons honey
one and one half cups of flour
1 tablespoon baking powder
one half teaspoon cinnamon
one eighth teaspoon nutmeg
1 firm, tart baking apple, peeled, cored and chopped.
Topping: 3 tablespoons sugar
one half teaspoon cinnamon
3 tablespoons finely chopped nuts (preferably pecans)
Directions
Preheat oven to 375 degrees. Beat egg slightly, and add milk, oil, sugar and honey. In separate bowl combine flour, baking powder and spices. Add to egg mixture, stirring just until moistened. Stir in apples. Fill greased muffin tins. Mix topping ingredients together, and spoon over batter (about one teaspoon for each muffin). Bake for 20-25 minutes.
