A good friend shared this recipe with me. It's delicious!

½ vanilla bean
½ cup powdered sugar
2 oz egg white
1 oz sugar
2 granny smith apples cored and peeled
1 lime, juiced

Preheat oven to 375.

In a saucepan over medium heat, cook Fuji apples, vanilla bean, powdered sugar and 1 cup of water of 1 hour, or until thick.

emove from heat and remove vanilla bean.

Slice the vanilla bean lengthwise, scrape the inside and add it back to the mixture.

Pulse the mixture in a food processor 5 times or until smooth.

Remove and allow to cool.

In the bowl of an electric mixer or hand mixer, whip egg whites together with sugar for 2 minutes, or until stiff.
