Apple Swirl Cake
Why I Love This Recipe
This apple cake came from my cousin Lianne, and I think it has a little bit more of a wow factor from the OJ in it.
Ingredients You'll Need
2 c apples, peeled, cored and shredded
1 1/2 t cinnamon
2 c sugar
1 c canola oil
1/4 c orange juice
2 t vanilla
3 c flour
1 T baking powder
1/2 t salt
Mix shredded apples with 3 T sugar and cinnamon, set aside
In a large bowl, combine 2 c sugar and cooking oil, beat well
Add eggs, OJ, and vanilla
Sift together flour, baking powder, and salt, add to wet mixture
Beat until smooth
Pour one third of the batter into greased and floured bundt pan
Squeeze liquid from apple mixture and layer half the apple mixture in the pan.
Repeat, putting 2nd third of batter then apples, and ending with layer of batter on top
Bake at 325 degrees for 60 minutes
Cool in pan for 10 - 15 minutes, turn out on cooling rack to complete cooling.
Sprinkle with powdered sugar
