This recipe reminds me of my all-time favorite restaurant up in Woodinville, Wa
Ingredients You'll Need
Puff pastry or phyllo dough
Apricot preserves
Wheel of Brie
Directions
Place some parchment paper on a nonstick baking sheet.
Lay out the desired amount of pastry - be generous with your carbs!
Prep your cheese: I remove the rind, but it's not necessary. Cut shallow, diagonal lines in the top of the brie in a each direction.
Place your prepped brie on top of the pastry sheets and smother with desired amount of apricot preserves.
Begin folding the pastry sheets over the top of the brie until it's fully covered.
Optional: slather a little more apricot preserves over the top to ensure the pastry remains closed.
Place in the oven at 400 degrees and bake until the pastry is a golden brown (20-30 mins)
ENJOY!
