Why I Love This Recipe

Energy balls are so easy to prepare.

Most of my recipes are for a dozen.

The ingredients needed are very much the same, just the flavoring is different.

I often make several batches at once, different flavors and store in the freezer. They stay fresh that way and can be eaten straight from the freezer.


Ingredients You'll Need

1/2 cup raw cashews
1/2 cup raw almonds
1/3 cup dried apricots (6)
1/3 cup pitted dates (4)
1 tsp vanilla extract
1 Tbsp coconut oil
1 tsp water (only if needed)

Shredded coconut blended into powder for coating.


Directions

Blend all ingredients (except the water) in your food processor until the mixture is crumbly.
There is no need to melt the coconut oil first - it will mix and blend well from the friction alone.
On low speed add the water and mix briefly. Mixture should be slightly wet and stick together when pressed firmly.


Scoop and roll in the palm of your hand and roll in the coconut powder to coat.
Bite size balls work the best.
These store well in the freezer.


Pairs Well With

a tall glass of nut milk, tea or coffee
