Arctic Orange Pineapple or Mango Pie

"Cream cheese, frozen juice concentrate, and whipped cream frozen in a cookie crust."

A cool summertime dessert when the temperature soars. Our favorite is pineapple topped with fresh pineapple.
Ingredients You'll Need
Cookie Pie Crust:
1 1/2 c. GF cookie crumbs
1/4 c. sugar
6 T. melted butter
Pie:
8 oz. cream cheese
6 oz. can frozen orange, pineapple, or mango juice concentrate
1 c. heavy cream, whipped
1 can fruit or fresh-mandarin oranges, pineapple, or mango
Directions
Mix crust ingredients together and pat into pie plate. Bake in an oven preheated to 375 F 6-7 minutes. Cool before filling. In a mixer bowl, beat cream cheese with juice concentrate until smooth and creamy. Fold in whipped cream. Pour into pie plate and chill in freezer at least 4 hour or overnight. Serve topped with fruit.
