Arlene's Easy Stuffed Shrimp

Why I Love This Recipe
I found this recipe many years ago in a magazine. Now I call it my own. It's a favorite of my family.
Recipe Can double for company.
Ingredients You'll Need
1 lb 13-15 count Shrimp raw, cleaned and split (butterfly)
18 Ritz crackers, crumbed
3 Tablespoons butter, melted
1 large can minced clams, drained
2 Tablespoons snipped parsley
1/8 teaspoon garlic powder
1/8 teaspoon salt
dash pepper
1/3 cup dry Sherry
Directions
Shell & devein shrimp.
Slit each along vein side about halway through. Combine ritz cracker crumbs & butter, stir in clams, parsley, garlic powder, salt & pepper.
Stuff each shrimp with clam mixture.
Arrange in 13 X 9 baking dish,
Bake in moderate oven (350) 18 to 20 minutes, basting occasionally with sherry.
Makes 4 servings.
Serve over rice.
