Arroz Con Pollo - Chicken And Rice

Why I Love This Recipe
Ingredients You'll Need
2 large onions finely chopped
1 large green pepper finely chopped
2 cloves of garlic
½ cup olive oil
salt, pepper and oregano to taste
In a large pot, sauté the above listed ingredients until tender. Add:
1 whole Chicken cut up (or you can substitute shrimp if desired)
3 cups of rice (mom likes Uncle Ben’s for this recipe
4 cups water
1 small can of tomato sauce
salt and olive oil to taste
Directions

Cook covered on a low heat for 15 to 25 minutes, until most of the liquid has been absorbed. Add:
1 small jar of pimentos
1 small can of petite pous (peas)
Continue to cook until the rice has absorbed all the excess liquid and is tender to the bite.
