Arugula Salad with a Ginger Honey Dressing

Why I Love This Recipe

I love to enjoy this fresh crispy salad in the summer time! It goes great with a poached egg on top! This is a great way to get in all of your vegetables and you can add just about any fruit or vegetable to this to make it your own!

Did you know that GINGER has a history of relieving digestive problems such as nausea, loss of appetite, and pain and that HONEY has antioxidants that help protect cells from free radicals!!

So enjoy this healthy/powerful yet yummy salad!

Ingredients You'll Need

1 cups Arugula
1/2 cup Spinach
2 tablespoons shredded carrots
2 tablespoons red onion
2 tablespoons goat cheese

Poach Egg
2 eggs
3 cups water
1 teaspoon white vinegar

Ginger Honey Dressing
1 teaspoon ginger paste
1 teaspoon honey
1 tablespoons balsamic vinegar
1 teaspoon olive oil
salt and pepper


Add arugula, spinach, carrots, and onion in a bowl and toss together

Top with goat cheese

Set aside

Crack one egg and put it in a cup

Bring water and vinegar to a boil

Once the water is boiling, bring the heat down and make a whirlpool in the water

Slowly pour the egg into the whirlpool water (make sure the egg white goes first)

cook for three minutes

remove with a slotted spoon

Do the same for the other eggs!

Ginger Honey Dressing

Add ginger paste, honey, baslsamic vinegar, olive oil and salt and pepper.

Mix well

Top Arugula salad with the poached egg and then drizzle the ginger dressing on top!
