"This salad makes a meal when topped with your favorite meat or with tofu."

Serves 4 as a side salad, 2 as an entree | Prep Time 15 minutes | Cook Time 15 minutes

Why I Love This Recipe

My friend Monica taught me how to make this salad. I love serving it with broiled fish on top.

Ingredients You'll Need

1 bag clean spinach, stemmed and coarsely chopped
1/2 cup chopped scallions or chives
1 package ram noodles (crushed and omit spice pack)
1/2 stick butter
2 tablespoons sesame seeds
1/2 cup pecans, chopped
1 tablespoon soy sauce
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons sugar


For the salad:
1. Stem spinach, chop chives, and toss together in a large bowl.
2. Melt butter in a pan over medium heat, sauce noodles, sesame seeds and pecans until golden toasted. Cool.
3. Toss spinach with toppings and make dressing.

For dressing:
Put soy sauce, olive oil, sesame oil, balsamic vinegar and sugar in a jar and shake well to combine. Pour over salad.

Pairs Well With

Some warm crusty bread would be good with this.
