Aunt Barbara's Chili and Kacamak

Why I Love This Recipe
This is a family favorite from Aunt Barbara, and Great-Aunt Baba Stella.
Ingredients You'll Need
Kacamak:
4 qt water
1 1/2 Tbsp salt
4 medium/lg potatoes, cooked & cubed
1 box yellow corn meal
1 stick butter
2, 3, 4 or 5 different cheeses (American, cheddar, brick, mozarella, cream)
approx 1/2 c of each cheese - little more of your favorites, less of the
not so favorite. (I just see what is in the refrigerator and add it - if I
only have two cheeses then that is all I add. Figure about a cup and a
half to two cups total.)
Make your favorite chili recipe (not included).
Directions
Put water on to boil - add salt and potatoes cubed, cook until potatoes are
falling apart. lower heat, take potatoe masher and mash potatoes, SLOWLY
add corn meal, stiring as it is added so that it does not lump....make it
the same consistency as cream of wheat.....keep stiring........if it gets
too thick remove from heat quickly and add stick of butter, stir till
melted. add shredded cheeses - stirring as you add. What you want is a
"cheesey, creamy" consistency.
Make your favorite chili recipe (not included).
Now you're ready to pull out a bowl, put a serving spoon or two of the
Kacamak in the bottom and fill the rest with chili......
