Ingredients You'll Need
3 eggs
2 C sugar
1 C oil
2 tsp vanilla
1 C walnuts (optional)
1 tsp salt
2 C zucchini shredded
2 C flour
2 tsp cinnamon
¼ tsp baking powder
2 tsp baking soda
Directions
Combine: eggs, oil, & vanilla and mix.
Add dry ingredients, mix well.
Fold in shredded zucchini.
Lightly grease loaf pans
put wax paper on bottom of pan
pour mix into pan
(divide between two pans)
Bake at 350 degrees for 1 hour or until done
(check after 45 min.)
Cool 30 min then remove from pan.
