Aunt Joan's Shrimp Scampi

Why I Love This Recipe
This recipe was passed from my great aunt, to my mom and has now been passed on to me - it's probably one of my most favourite foods of all time!
Ingredients You'll Need
Shrimp - to your liking
1/4 lb unsalted butter or margarine
1 1/2 tsp onion, chopped
1 1/2 tsp carrot, grated
1 1/2 tsp fresh garlic, minced
1 1/2 tsp fresh basil, finely chopped
1 tsp paprika
1/2 cup dry white wine
2 tbsp lemon juice
1/8 tsp crushed red pepper
salt & pepper to taste

Directions
In a large saute pan, melt butter & saute onion & carrot over low heat until soft.
Add garlic & cook for approx. 30 secs.
Add basil & paprika & mix.
Turn heat up to medium, add shrimp, wine, lemon juice & red pepper.
Cook until shrimp are pink.
