Aunt Kate’s Pumpkin Roll

Why I Love This Recipe
This is one of my all-time favorite recipes. Of all the other pumpkin roll recipes I've eaten, this one still tastes the best. It always reminds me of fall and the leaves changing.
Ingredients You'll Need
For the roll
3 eggs
1-cup sugar
¾ cup pumpkin
1 tsp. Lemon juice
¾ cup flour
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
Filling
8 oz. Pk. Cream cheese
1 cup powdered sugar
4 T cool whip
½ tsp vanilla`
Directions
Whip together cheese, sugar and vanilla.
Fold in cool whip.
Unroll cool cake and spread on filling and re-roll.
Chill several hours before serving (also freezes well)
