"Creamy Orange Salad"

Why I Love This Recipe

Historical note: In the ancient past (long before TVs, cars and cell phones) Mandarin oranges were a tribute fruit, brought to the Chinese Emperors' Courts. They were grown by surrounding Asian kingdoms who paid tribute to China. Only if one was gifted some fruit could they be tasted. See here for how we have them to buy today:

Ingredients You'll Need

16-oz containers Cool Whip
6-oz box orange jello, sugared or sugar free
2 11-oz cans mandarin oranges (drained)
20-oz can crushed pineapple (drained)
24-oz container small curd cottage cheese
Optional: 1/4 cup maraschino cherries, quartered

Note: Any ingredients may be increased, decreased or removed to your own taste. This recipe doubles or halves well too.


In a large bowl mix together cool whip and cottage cheese. If you prefer a smoother texture, you can beat the cottage cheese in a blender until smooth before adding to the Cool Whip.

Sprinkle the dry jello on them. With a wooden spoon, gently mix the ingredients. Add the fully drained Mandarin oranges, crushed pineapple and maraschino cherries. Gently fold all ingredients together until well mixed.

Carefully spoon into a pretty serving dish (glass chills more quickly) and chill for at least 1 hour before serving. Enjoy!
