Ingredients You'll Need
For the Aromatics:
• 1 tablespoon cooking oil

• 1–2 jalapeños, sliced
• ¼ cup red onion, sliced
• 1–2 tablespoons Shaoxing wine (to taste)
For the Shrimp:
• 18–20 jumbo shrimp (head-on, shell-on, deveined and legs trimmed if preferred)
• ½ teaspoon garlic powder
• ½ teaspoon onion powder
• ½ teaspoon ground black pepper
• ¼ cup cornstarch
For the Salt and Pepper Seasoning:
• 1 teaspoon salt
• 1 teaspoon ground black pepper
• 2 teaspoons sugar

Directions
Fry the Shrimp:
• Heat oil to 400°F.
• Fry the shrimp for 2–3 minutes on high heat until crispy outside and juicy inside.
• Remove and place shrimp on a cooling rack to stay crispy.
Cook the Aromatics:
• In a pan or wok, heat 1 tablespoon oil.
• Add the minced garlic first and sauté briefly until fragrant.
• Add a splash (about 1–2 tablespoons) of Shaoxing wine.
• Then toss in the jalapeños and red onion. Stir-fry until everything is fragrant and slightly softened.
Toss Everything Together:
• Add the fried shrimp into the pan with the aromatics.
• Sprinkle with the salt and pepper seasoning mixture (to taste).
• Give everything a good toss so the shrimp gets well coated.
Serve:
• Serve the shrimp hot, with sweet and sour sauce on the side for dipping.
• Enjoy with fried rice for a full meal or eat on its own with chopsticks!
