Austin's Taco Salad Bar with Lily's Homemade Salsa
"In his kindergarten record book, Austin was asked: What is your favorite food? His answer: Taco Salad with Salsa."Serves 6-8 | Prep Time 15 minutes | Cook Time 10 minutes
Why I Love This Recipe
Austin's first babysitter Lily fed him salsa as a baby hence his true love of Mexican cuisine. He always wanted tacos with salsa for dinner. Taco Salad became an early (and healthier) beloved family meal. Instead of a large salad bowl, you can put all ingredients out and let everyone assemble their own taco salads and salsa away!
Ingredients You'll Need
1 lb. hamburger, fried
1 tablespoon taco seasoning
Iceberg Lettuce, shredded
1 cup Mexican style shredded cheese
small can of sliced black olives
1 cup dark red kidney beans
1 cup canned roasted corn
Crushed tortilla chips
Lily's Homemade Salsa:
1 -14.5 ounce can diced tomatoes OR fresh tomato, seeded & chopped
1 -10 ounce can diced tomatoes with green chiles
3 cloves garlic
1 jalapeno deseeded and membranes removed
1/2 tablespoon honey
1/2 cup cilantro
1/4 teaspoon salt
Juice from 1/2 lime
Blend all above ingredients in blender/food processer.
Fry hamburger meat in a skillet with taco seasoning. Let cool completely.
Assemble all ingredients with hamburger meat in large salad bowl.
Garnish with crushed tortilla chips, homemade salsa and salad dressing
Pairs Well With
Use homemade salsa, Thousand Island or Southwest style salad dressing.
