Directions
In a medium saucepan, combine the apple cider, pomegranate juice, fresh orange juice, and brown sugar. Stir well to dissolve the sugar.
Add the cinnamon sticks, whole cloves, vanilla extract, ground nutmeg, and star anise to the mixture.
Place the saucepan over medium-high heat and bring the mixture to a gentle simmer, stirring occasionally. Once it starts simmering, reduce the heat to low.
Allow the mixture to simmer for about 10 minutes, allowing the spices to infuse into the cider.
Remove from heat and let the mixture cool slightly. Strain the liquid through a fine-mesh sieve to remove the spices, then stir in the lemon juice.
Prepare serving glasses with a few ice cubes each. Pour the strained cider mixture over the ice.
Garnish each glass with apple slices and a sprinkle of pomegranate seeds. Serve immediately and enjoy the warm, cozy flavors of fall.
