Avocado Egg Salad

This healthy egg salad is made extra creamy from the addition of avocado. Such a tasty twist on the traditional egg salad that makes an egg-cellent addition to any lunch box. Eat it with leaf lettuce, Soft crackers ( like Ritz or Captain's Crackers), or on your favorite soft bread/wrap.
Ingredients You'll Need
1 Large Avocado (finely diced)
3 Hard Boiled eggs ( Chopped; boil eggs for 6-7 min.)
2 Tbsp. Red Onion (chopped)
1 Tbsp. Chives (chopped)
1 Tbsp. Parsley (chopped)
2 Tbsp. Mayonnaise
1 Tsp. Lemon Juice
Salt and Pepper (to taste)
Directions
Add all ingredients to a large bowl. Stir to combine.
