Why I Love This Recipe
I actually combined several different recipes to make this one recipe for a chili cookoff at my church. I won the first year I entered and came in 2nd the next year.
Ingredients You'll Need
• 2 pounds ground beef
• 6 slices of bacon chopped
• 2 chicken breasts cut up
• Chili Powder
• ¼ teaspoon ground cumin
• 2 tablespoons vegetable oil
• 1 onion chopped
• 1 Green Bell Pepper seeded and chopped
• 1 Jalapeno Pepper seeded and chopped
• 1 Red Bell Pepper seeded and chopped
• 1 cup sliced mushrooms
• 2cloves garlic, minced
• Tomato Sauce
• 1 can tomato paste
• 1 small jar of Jalapeno salsa
• 1 ½ cups water
• 1 can red kidney beans or Mexican style beans
• Sliced ripe olives
• ½ teaspoon ground cumin
• Salt and pepper to taste
• Hot Sauce to taste
• Condiments: shredded cheddar cheese, sour cream
Directions
Cook meats, chili powder, cumin, half the onion, half the green bell pepper, and half the red bell pepper until done. Drain and set aside. Cook rest of onion, green bell pepper, red bell pepper, all of garlic, all of mushrooms, and all of jalapeno pepper in oil until tender. Stir in meat mixture, tomato sauce, salsa, beans, water, and tomato paste. Cover and simmer for 20 minutes. Add more chili powder, olives, cumin, hot sauce, salt and pepper. Stir well; simmer 15 minutes. Serve.
