Why I Love This Recipe

Kuku is a traditional Azerbaijani dish that dates back to ancient times. It was originally prepared for royal banquets and has since become a beloved part of Azerbaijani cuisine.


Ingredients You'll Need

6 eggs
2 cups chopped fresh herbs (parsley, dill, cilantro)
1 large onion, finely chopped
1/2 cup walnuts, chopped
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons olive oil


Directions

Preheat the oven to 350°F (175°C).


In a large bowl, beat the eggs. Add the chopped herbs, onion, walnuts, turmeric, cumin, salt, and black pepper. Mix well to combine.


Heat the olive oil in a large oven-proof skillet over medium heat. Pour the egg mixture into the skillet and cook for 3-4 minutes, until the edges start to set.


Transfer the skillet to the oven and bake for 15-20 minutes, until the kuku is set and the top is lightly golden.


Remove from the oven and let it cool slightly. Cut into wedges and serve warm or at room temperature.


Pairs Well With

Azerbaijani Shirvan wine pairs beautifully with Kuku, complementing the rich flavors of the herbs and spices.
