Ingredients You'll Need
2 cups chopped fresh herbs (parsley, dill, cilantro)
1 large onion, finely chopped
1/2 cup walnuts, chopped
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons olive oil
Preheat the oven to 350°F (175°C).
In a large bowl, beat the eggs. Add the chopped herbs, onion, walnuts, turmeric, cumin, salt, and black pepper. Mix well to combine.
Heat the olive oil in a large oven-proof skillet over medium heat. Pour the egg mixture into the skillet and cook for 3-4 minutes, until the edges start to set.
Transfer the skillet to the oven and bake for 15-20 minutes, until the kuku is set and the top is lightly golden.
Remove from the oven and let it cool slightly. Cut into wedges and serve warm or at room temperature.
