Why I Love This Recipe

I'm weird I don't really like mac and cheese to well. But I know the rest of the universe does! So here is my mothers recipe for you to try because I think its the best in this universe :)

Ingredients You'll Need

1 LBs elbow macaroni or baby shell macaroni or spiral macaroni (I use spirals the most in this recipe!) barely cooked still kind of stiff al dente (it cooks more in oven)
1 stick of Butter
1/3 C Flour
4 C Milk
Opt: My grandmother used 1 less cup of milk and added 1 can of cream of mushroom soup
8 oz cubed Velveeta cheese or American
16 oz shredded Sharp Cheddar cheese
16 oz shredded Colby cheese
8 oz Shredded Provolone cheese
Sour cream
A couple handfuls of italian shredded mix cheese mixed w/ a couple handfuls of shredded mozzarella to sprinkle over top before adding topping
Opt: 2- 4 TBS diced tomatoes or tomato soup (my mom used the tomatoes about 1/2 the times she made it but I never added them! If I'd try any added veggie from the garden I'd try diced fully ripe pimento peppers)

3 TBS butter
Garlic powder
Parsley flakes
About 1/2 - 3/4 can Unseasoned bread crumbs/ Panko (used panko in pic above) (I usually use garlic butter croutons chopped up in processor and add to the 3 TBS garlic butter)
*Note: Someone said they used stove top stuffing all chopped up in food processor for topping
Opt: About 1/4 C Parmesan cheese


Grease w/ butter 9x13 baking dish and preheat oven to 350 F
Make pasta firm al dente strain and put back in pan w/ lukewarm water

On stove top melt stick of butter and stir in flour cook over low heat a couple mins stirring constantly then remove from heat and set aside

Slowly mix 4 Cups cold milk with flour mix over low heat stirring constantly until milk mix thickens up and remove from heat. Add cheeses (velveeta, cheddar Colby and provolone) Stir until melted add sour cream to taste

Strain pasta and add to cheese mix. Stir and pour into baking dish bake for about 10 mins then add italian mix and motzerella then add topping

Melt butter in pan sprinkle garlic powder and parsley over butter and add bread crumbs turn off heat and stir til well coated.sprinkle bread crumbs evenly over macc and cheese then sprinkle parm. cheese (if using xtra parmasan... Italian mix cheese allready has parm so i don't add the xtra parm when using the italian mix) over bread crumbs and return to oven. Cook until pasta is done, cheese is all melted and topping is browned a lil
