Ingredients You'll Need
2 Tbsp. margarine
1/2 c. sliced mushrooms
1/4 c. chopped onion
1/4 c. chopped green pepper
1 c. medium pearl barley
2 c. chicken broth
1/2 tsp. salt
Directions
Heat margarine in heavy 3 quart saucepan. Saute mush-
rooms, onion and green pepper for 5 minutes, stirring frequent-
ly. Add barley, chicken broth and salt; stir. Heat to boil-
ing. Reduce heat. Cover and simmer for 45 to 50 minutes or
until barley is tender and liquid is absorbed. Stir occasion-
ally and add broth, if necessary.
