Great comfort good and quick to cook and freeze for future lunches or dinners.


Ingredients You'll Need

1 Pkg (6 oz) stuffing mix
1 cup water
2 tablespoons hickory smoke-flavored BBQ sauce (or Honey BBQ, etc.)
1 pound ground beef or ground turkey
1 cup shredded cheddar cheese
Add’l hickory smoke-flavored BBQ sauce


Directions

1. Preheat oven to 375 degrees. In large bowl, combine stuffing mix, water and 2 Tbls BBQ sauce. Add beef; mix lightly but thoroughly. Press 1/3 cup mixture into each of 12 ungreased muffin cups

2. Bake, uncovered, 18-22 minutes or until a thermometer reads 160 degrees. Sprinkle tops with cheese, but no cheese if plan to freeze. Bake 2-4 minutes longer or until cheese melts. If desire, serve with add’l BBQ sauce on top. Enjoy!

3. Freeze option: Securely wrap and freeze cooled meat loaf in foil and/or freezer bag. When ready to use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Bake in a preheated 350 degree oven until heated thoroughly or pop in microwave for about 30-40 seconds. Top with cheese as directed.
