Serves 4 | Prep Time 10 minutes | Cook Time 15 minutes

Why I Love This Recipe

For a fancy variation, add sliced avocado and toasted croutons.

Ingredients You'll Need

For the salad:
250G of penne pasta
250G of rindless bacon rashers, (thinly sliced)
2 x baby cos lettuce chunks, (torn)
250G of cherry tomatoes, (halved)
1/4 x Cup of parmesan cheese, (grated)

For the dressing:
1/4 x Cup of whole egg mayonnaise
2 x TSP of wholegrain mustard
2 x TSP of lemon juice
1 x TBSP of chives, (finely chopped)


Cook pasta in a large saucepan of boiling salted water. Drain well and cool.

Meanwhile, heat a medium frying pan on high. Saute the bacon for 2-3 minutes, until crispy.

For the dressing; in a small jug, whisk together all the ingredients and season to taste.

In a large salad bowl, combine the pasta, lettuce, tomatoes and bacon. Drizzle the dressing over and sprinkle with parmesan.
