BLUE CHEESE GLAZED FILLET

Ingredients You'll Need
4 six ounce fillets of beef
4 tablespoons olive oil
Salt and black pepper
BLEU CHEESE GLAZE
3 to 4 ounces Bleu Cheese, crumbled
6 eggs yolks
1 teaspoon Worcestershire sauce
Juice of one lemon
Salt and cracked black pepper
½ cup heavy cream
Directions
• Preheat the oven to 400 degrees. Preheat the grill. Rub
the fillets with 2 tablespoons olive oil. Season each fillet
with salt and pepper. Place the fillets on the hot grill and
cook for about 6 to 8 minutes on each side for medium
rare. Place each fillet on an ovenproof plate and spoon the
glaze (see below) over the fillets and around the rim. Place
the fillets in the oven and roast until the glaze is lightly
golden brown, about 2 minutes. Serve. Serves 4.
• In a food processor, puree the cheese, yolks,
Worcestershire sauce and juice of one lemon together,
until smooth, about 2 minutes. Season with salt and
cracked pepper. With the machine running, slowly add
the cream and combine until velvety and creamy. If the
glaze does not have a ribbon like texture, add a little more
cream. Yield: about 2 ½ cups
