Why I Love This Recipe

I went to eat at a very high rated restaurant and was served an unusual side of eggplant. It was so different and I loved it. The restaurant however, fried the dish and I converted to broiling to make it more healthy. It was very unusual and I had to ask to make sure it was really eggplant.


Ingredients You'll Need

1 eggplant, smooth and shiny with no wrinkles, sliced in half inch thick slices. Do not peel.
1 beaten egg
Graham wafer crumbs
Pam cooking spray


Directions

Dip the eggplant slices into the beaten egg and then into the Graham wafer crumbs.


Spray a cookie sheet with Pam.


Place the dipped eggplant on the cookie sheet and spray slices with Pam.


Turn on your broiler to high. When hot place cookie sheet about 4 inches below element. Broil until the crumbs start to change colour. Flip the slices, spray them with Pam and broil again until the second side just starts to turn colour.


Serve warm.
