Ingredients You'll Need
12 large scallops, pat them dry
12 slices of thick-cut bacon
2 cloves of garlic, minced
2 tablespoons unsalted butter, divided
Juice of 1 lemon
1 tablespoon olive oil
Fresh parsley, finely chopped, for garnish
Salt and pepper, to taste
Toothpicks, soaked in water
Directions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wrap each scallop with a slice of bacon and secure it with a soaked toothpick. Place them on the prepared sheet.
Season with salt and pepper.
Bake for approximately 12-15 minutes or until the bacon is crispy and the scallops golden. Turn halfway through for an even cook.
While cooking, make the sauce. Heat 1 tablespoon of butter in a small saucepan, add garlic, and sauté until fragrant.
Stir in the lemon juice and a tablespoon of olive oil, then simmer for 2 minutes. Finish with the remaining butter and mix until glossy.
Once scallops are ready, remove from oven, discard toothpicks, and drizzle with warm lemon garlic butter sauce.
Garnish with fresh parsley before serving warm.
