Baked Barbequed Chicken
Why I Love This Recipe
Ingredients You'll Need
10 to 12 lbs. chicken parts, skin removed, cut into small serving pieces
1 tsp. salt
1 tsp. freshly ground black pepper
1/4 cup vegetable oil
2 Tbsp. vinegar
1 cup ketchup
2 Tbsp. sugar or honey
2 Tbsp. Worcestershire sauce
1/4 tsp. crushed red pepper flakes
1. Preheat oven to 350ºF. Place chicken in two 9” x 13” baking dishes and sprinkle with salt and pepper. Drizzle with vegetable oil.
2. Squeeze juice from the lemons into a medium bowl. Add remaining ingredients and whisk to combine. Pour over chicken and cover tightly with lids or foil. Cook chicken for 30 minutes.
3. Uncover baking dishes and cook for 20 to 30 minutes more, or until chicken is cooked through.
Note: This dish can be made up to a week in advance and frozen. Thaw it overnight in the refrigerator and reheat, covered, for about 30 minutes at 350ºF.
