"Good Old Fashioned Baked Beans"

Serves 8 | Prep Time 20 minutes *Plus beans soak overnight | Cook Time approximately 4 1/2 hours bake time

Ingredients You'll Need

1 pound dry navy or pea beans
6 cups water
1/2 pd salt pork, cut into 1/2 " dice
1 small onion peeled
1/3 cup molasses
1/4 cup sugar
1 teaspoon dry mustard
1/4 teaspoon pepper


Soak beans overnight in water.
Place beans with your soaking water in large kettle (add more water to cover if needed).
Bring to boil; lower heat and simmer till beans are tender. Drain, reserving liquid.
Place salt pork, onion, and beans in 2-quart bean pot or casserole dish.
Combine molasses, sugar, mustard, pepper in one cup of reserved liquid.
Pour over beans , stir thoroughly.
Add just enough bean liquid to cover beans.
Cover pot or casserole and bake at 300'F for 2 hours.
Add liquid if needed, stir and continue baking 1 1/2 to 2 more hours until beans are tender.
Bake uncovered for last 1/2 hour.
