Baked Creamy Chicken Taquitos

Why I Love This Recipe
Ingredients You'll Need
1/3 cup Cream Cheese
1/4 cup Green Salsa (Verde)
1 Tbsp Fresh Lime Juice
1/2 tsp Cumin
1 tsp Chili Powder
1/2 tsp Onion Powder
1/4 tsp Garlic Powder
3 Tbsp Cilantro, Chopped
2 Tbsp Green Onions, Sliced
2 cup Shredded Cooked Chicken, Or Grilled Taco Chicken - - YUM!
1 cup Pepper Jack Cheese, Shredded
Small Corn or Flour Tortillas
Kosher/Coarse Salt (Optional)
Cooking Spray
Directions
Oven Temperature: 425°F
*Heat oven to 425 degrees and line a baking sheet with foil; lightly coat with cooking spray
*Heat cream cheese in the microwave for about 20-30 seconds, so it's soft and easy to stir; add green salsa, lime juice, cumin, chili powder, onion powder, and garlic powder
*Stir to combine and then add cilantro and green onions; add chicken and cheese and combine well
*Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking (it helps to place them between damp paper towels, usually 20-30 seconds will do it - if you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing)
*Place 2-3 Tbsp of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges
*Roll it up as tight as you can; place seam side down on the baking sheet; lay all the taquitos on the baking sheet and make sure they are not touching each other
*Spray the tops lightly with cooking spray and sprinkle some coarse salt on top (only a little, the stuff is strong - or just leave it off)
*Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown
Dipping Sauce Ideas:
*Avocado mixed with small amount of sour cream, salt, pepper, and dash of ground red pepper and/or garlic
*Sweet Chile Sauce
*Supreme Ranch Dressing Mix (recipe below)
Supreme Ranch Dressing Mix: 1 c mayonnaise 1/2 c milk 1 lime (2 Tbsp) 2 garlic cloves, minced 1/2 c cilantro 1/4 c green salsa hot sauce, to taste (optional) blend all and add hot sauce if you want heat; refrigerate several hours to thicken
Recipe Tips
*You can use flour or corn tortillas
*It doesn't need the salt on top, more for looks...if you use it do so sparingly, as it will be easy to have overwhelming salty yuckiness
