Baked Garlic Potato Casserole

This side dish goes well with beef or pork.
Ingredients You'll Need
2 large Potatoes, sliced 1/4-inch thick
2 Tablespoons Olive oil
2 Tablespoons Butter
1 large Onion, diced
1 1/2 teaspoon Garlic, minced
2 teaspoons Parsley, chopped
Directions
Pre-heat the oven to 400. Heat the oil and butter in a
skillet. Add the onion and cook until soft. Add the garlic
and cook for 2 minutes longer. Lightly oil a medium
casserole dish. Layer in the sliced potatoes. Pour the
mixture over the potatoes. Cover and bake for 1 hour (or
until the potatoes are tender). Serve warm, garnished with
parsley.
