Why I Love This Recipe

This one is super quick and easy--good for when you're too tired to do anything fancy and don't want to spend a lot of time in the kitchen.

Ingredients You'll Need

1/2 chicken breast, split and scored
1 tbsp ground mustard
1/2 tsp cayenne
1/2 tsp allspice
1/4 tsp nutmeg
1/2 tsp thyme
2 tbsp canola oil
salt to taste


Preheat oven to 400F and line a baking tray with foil--you can spray a bit of oil on it to keep the chicken from sticking but since the marinade has oil in it you should be fine either way.

Mix oil, herbs/spices and salt together to combine. Then rub it into the split, scored chicken breast. No resting time necessary, you can bake it right away!

Bake for 10-13 minutes and serve

Pairs Well With

potato wedges, mashed potatoes, red cabbage and apple chutney, wraps, and sandwiches
