Why I Love This Recipe
An excellent healthy side dish! Goes good with steak! For a snack or appetizer, chop, mix, and serve with pita chips.
Ingredients You'll Need
2 large tomatoes
½ cup mushroom, minced
1 tsp parsley
1 clove garlic, minced
1 scallion, chopped
1 tsp fresh basil, finely chopped
½ tsp fresh thyme
¼ cup flaxseed oil (or walnut oil)
Slice tomatoes in half, scooping out most of the pulp, and set in medium-sized baking dish. Combine pulp with remaining ingredients and fill each tomato half. Bake at 375 degrees for ten to fifteen minutes.
