Balsamic Chicken with Mushrooms and Sundried Tomatoes

Serves 2-4 | Prep Time 10 minutes | Cook Time 35-40 Minutes

Why I Love This Recipe

This is one of my favorite chicken dishes not only because it's delicious but also because you need to sample the wine before you use it for cooking!

Ingredients You'll Need

2 Cups Pinot Noir
8 Boneless, skinless chicken thighs
4 Tbsp Flour
1 Tbsp Olive oil
1/2 Finely chopped onion
8-10 Chopped garlic
1/2 Cup sliced mushrooms
1 Cup sundried tomatoes
1/2 Cup balsamic vinegar
1/2 Cup chicken stock
salt & pepper


Dip chicken in flour, salt & pepper
Over medium-heat, add chicken and cook until golden in color
Remove from pan
In a sauce pan, sauté onion, garlic, and mushrooms until soft
Add sun-dried tomatoes, pinot noir, vinegar, chicken stock, and chicken
Simmer for 30 minutes
