"Moist Banana Bread"

Serves 3 Loafs | Prep Time 15 min PT15M | Cook Time 1 hr PT1H15M | Misc. Bread

Why I Love This Recipe

Best banana bread I have eaten. I have made it both non-dairy & vegan before by using margarine, almond milk & egg substitutes.


Ingredients You'll Need

3 c all purpose flour
3 c sugar
2 tbsp lemon juice
1 c milk (substitute for non-dairy)
1 c softened butter (substitute for non-dairy)
4 eggs (substitute for vegan)
1/4 tsp salt
2 tsp baking soda
3 bananas
2 tsp vanilla extract

1/2 c chocolate chips (optional)
1/2 c walnuts (optional)

1/8 c brown sugar
3 tbsp butter
4 tbsp heavy cream
1/8 tsp salt


Directions

1. Preheat oven to 350 C
2. Coat the inside of three glass loaf pans with butter/margarine
3. Combine lemon juice and milk and let sit 10 minutes until milk is curdled
4. In one bowl add flour, baking soda & salt
5. In a separate bowl combine softened butter & sugar.
6. Add eggs one at a time until mixed
7. add vanilla extract, mashed banana* & milk to sugar mixture
8. Add flour mixture to wet ingredients through a fine mesh strainer or sieve.
9. Add any optional ingredients.
10. Bake for 1 hour at 350 C
11. Melt butter and brown sugar on medium heat
12. add salt.

13. when sugar starts to bubble add heavy cream and lower heat.
14. cook until sugar is all dissolved then remove from heat.
15. Once banana bread is cooked when a toothpick is entered let it cool for 30 min.
16. Once cooled spoon the caramel glaze on top and let the whole thing cool 2 hours.

* use a potato ricer to mash bananas if you have one. easier and no lumps.
