Why I Love This Recipe

I substituted the whole wheat flour (the original recipe I was given suggested 1.5 cups of all-purpose) in order to increase the fibre content of the recipe. If using regular sugar instead of sweetner, use 3/4 cup.

Ingredients You'll Need

3/4 cup all-purpose flour
1/2 cup whole-wheat flour
1 cup splenda (or other sweetener)
1 egg
1 egg white
1/2 tsp baking powder
1 tsp baking soda
1/4 cup fat-free plain or vanilla yogurt (Such as Silhouette or Source)
1/4 cup vegetable oil
1 tsp vanilla
1 cup mashed bananas.


Mix together flours, baking powder, and baking soda.

In a separate bowl, mix sugar, egg, egg white, yogurt, oil, and vanilla. Add in mashed bananas.

Slowly add in dry ingredients, but do not over-mix. Batter should be a bit lumpy.

Pour into loaf pan (9x5", coated with spray oil) and bake in oven for 1 hour at 180C or 350F, or until a toothpick comes out clean.
