Why I Love This Recipe
You can use any plant based milk, I just prefer almond-coconut.
I use coconut oil spray to grease the pan but you can use any sort of vegan oil/ butter.
Make sure the bread is cooled before taking it out of the pan.
This recipe works for any size bread/ muffins, just adjust the cooking time accordingly.
Ingredients You'll Need
4 bananas mashed
2 Tbsp ground flaxseed
1/3 cup almond milk
1/3 cup melted coconut oil
2 Tbsp maple syrup
2 tsp vanilla
1/4 cup sugar
1/2 cup whole oats
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups wheat flour
1/4 cup chopped walnuts (optional)
1/4 cup vegan chocolate chips (optional)
Mash the banana in a large bowl.
Mix the wet ingredients: flax, milk, oil, maple syrup, and vanilla in with the banana.
Mix in dry ingredients: sugar, oats, baking soda, baking powder, salt, and flour.
Optional: Mix in walnuts or chocolate chips.
Pour batter into pan and bake at 350 degrees for 1 hour.
