Why I Love This Recipe

If you have bananas that are past their expiration, put them to good use with this recipe. They should be mostly brown on the outside. You will smell it when they are ready for banana bread!


Ingredients You'll Need

1/4 cup white or turbinado sugar
1/4 cup brown sugar
3 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
1 1/4 cup almond meal
1 1/4 cup whole wheat flour
4 bananas (browning)
1 egg
1/2 teaspoon vanilla
3 Tablespoons olive oil
3 Tablespoons honey
1/2 cup almond milk


Directions

Preheat the oven to 350° F.


In a medium bowl, combine the dry ingredients: white sugar, brown sugar, baking powder, salt, cinnamon, almond meal, and whole wheat flour.


In a large bowl, mash together the bananas. Add the wet ingredients: egg, vanilla, olive oil, honey, and almond milk.


Slowly mix the dry ingredients into the bowl with the wet ingredients.


Grease a bread pan and lightly dust with flour to help prevent the bread from sticking to the pan. Pour the banana mixture into the pan. Bake for 60-75 minutes or until a toothpick comes out clean.
