Why I Love This Recipe

You can use this recipe to make a 9 X 13 " or two 8" or 9" layers or cupcakes (makes 18 to 24). I sometimes frost this with a peanut butter frosting.


Ingredients You'll Need

3/4 cup butter (1 1/2 sticks)
1 1/2 cups sugar
1 1/2 cups mashed very ripe bananas
2 eggs
1 tsp vanilla extract

2 cups flour
1 tsp soda
1 tsp salt

1/2 cup buttermilk (or 2 tsp white vinegar plus milk to make 1/2 cup)


Directions

Preheat oven to 350 degrees F.


Grease and lightly flour a 9X13" pan or 2 8" or 9" pans. Or put liners into 2 12-hole cupcake pans.


In medium bowl, combine flour, soda, and salt. Set aside.


Cream butter and sugar.


Add banana, eggs, and vanilla and mix well. Mix on medium speed for about 2 minutes.


Add dry ingredients about one third at a time alternately with one third of the milk. Beat after each addition.


Pour into prepared pans. Bake for about 20 minutes or until cake is done. Adjust baking time for cupcakes.
