Banana Muffins With Cream Cheese Icing

Why I Love This Recipe
This super simple recipe can be made with sugar substitute, too! I also use other fruits, like strawberries or blueberries, to spice it up. I whip these up in about 10 minutes, and they freeze well, too!
Ingredients You'll Need
Dry:
1 1/2 c. whole wheat flour
1/2 cup sugar
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
Wet:
1 1/2 cup mashed bananas
1/2 cup vegetable oil
2 large eggs
1 tsp. vanilla
Icing:
1 block low fat cream cheese
1 cup powdered sugar or Splenda
1 Tbls. lemon zest
milk
Directions
Sift together in a large bowl.
1 1/2 cup mashed bananas
1/2 cup vegetable oil
2 large eggs
1 tsp. vanilla
Make a hole in flour mixture and pour wet ingredients into center. Fold in wet ingredients until just combined.
Divide batter evenly into lined muffin tin and bake at 350 for about 15 minutes. Allow to cool completely before icing.
Icing:
1 block low fat cream cheese
1 cup powdered sugar or Splenda
1 Tbls. lemon zest
milk
Blend cream cheese, sugar, and zest until combined. Pour in milk a Tbls. at a time until desired consistency is reached. Icing should be glossy and thick.
