Why I Love This Recipe

This is a great bread recipe for those old bananas, or ones you have tucked away in the freezer. Always better the next day! I usually double the recipe.

Ingredients You'll Need

1/2 c. vegetable oil
1 c. sugar
2 eggs
3 bananas (peeled and mashed)
1 3/4 c. flour
1/2 t. salt
1 t. vanilla
3 T. boiling water
1/2 c. nuts, pecans or walnuts (chopped)
1 t. baking soda

Directions

Beat oit and sugar together. Mix in eggs and bananas. Stir in dry ingrediants. Add vanilla, boiling water, and chopped nuts. Pour into a greased and floured loaf pan. Bake at 350 degrees F. for 1 hour. Use a toothpick to check if done.
