Banana Oatmeal Walnut Cranberry Muffins

Why I Love This Recipe
Threw these together one afternoon just to get rid of some bananas so I wouldn't have to throw them away....they were a smash!

Ingredients You'll Need
4 oz by weight - old fashioned rolled oats
6 oz by weight - all purpose flour
1 tsp baking soda
¼ tsp baking powder
¼ tsp salt
1 stick unsalted butter- softened (omit salt of using salted butter)
8 oz sugar
2 eggs
½ tsp vanilla
1 cup mashed very ripe bananas (2 to 3 bananas)
½ cup chopped walnuts
½ cup dried cranberries
Directions
Heat oven to 350.
Cream sugar and butter together. Add eggs one at a time. Add oats. Mix on medium speed for a minute. Scrape bowl and add vanilla and banana. Mix one minute. Add flour, baking soda and powder, walnuts, and cranberries. Mix until just incorporated.
Fill lined muffin tins (16-17) ⅔ full. Baked at 350 for 17-18 minutes.
