Banana Pancakes

Why I Love This Recipe

My dad's pancakes. Brown sugar can be added for additional sweetening, to his disappointment.


Ingredients You'll Need

3/4 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
3/4 cup + 1 Tablespoon milk
1 Tablespoon olive oil
1 banana
1 Tablespoon butter
Maple syrup


Directions

Mix the flour, baking powder, and salt in a medium bowl and set aside.


In a small bowl, combine the egg, milk, and oil. Mix well and then add the wet ingredients to the dry ingredients.


Lastly, add in thin slices of banana.


The mixture should be moist enough to slowly dribble down the spoon when lifted. If the mixture is too thick, add more milk. If too thin, add more flour.


Butter the pan and turn to medium-low heat. Drop in spoonfuls of batter and wait until small holes form on the top of each pancake before flipping. Once flipped, cook a minute longer and serve with maple syrup.
