Banana Walnut Bread
Why I Love This Recipe
My dad's all time favorite breakfast. Our family has always had trouble finishing a bundle of bananas from the market. What else better to do with over ripe bananas? Make a bread! I started making this bread when I was 10 and have continued to bake it up anytime I come home.
Ingredients You'll Need
1 1/4 Cups all purpose flour
1 Teaspoon baking soda
1/2 Teaspoon cinnamon
1/2 Teaspoon salt
1 Cup sugar
1/2 Cup Olive oil
2 Large eggs
3 Medium overripe bananas
3/4 chopped walnuts
1 Teaspoon Vanilla Extract
Start by pre-heating the oven at 350 degrees.
In a medium bowl mix all dry ingredients. This includes the flour, sugar, baking soda, cinnamon, and salt.
In a small bowl mix eggs, olive oil, nuts, & vanilla. Mix this until creamy.
Keep bananas in peel and smash with hands. Once the my bananas are mashed to your liking, add bananas to small bowl.
Add small bowl mixture to medium bowl mixture. mix until smooth. with the exception of banana.
Lightly coat 9x5 baking pan with olive oil. Pour mix into pan and lightly sprinkle a hand full of walnuts on top of mix. Bake for 45-50 minutes, or until you can insert toothpick & have it come out clean. Top of bread should be golden brown in color.
